Recipe: Creole Chicken

I’m a big fan of chicken wings, best believe I order this everywhere and anywhere. No chicken wings on the menu and I probably won’t be eating there. It’s rich in protein and quick bite.

I have a simple chicken classic to make you the life of the party- how you like that, huh!!

Ingredients

 Chicken Marinade

  • 2Lb Chicken wings
  • 1 Tablespoon grated ging
  • 1 Tablespoon Black pepper
  • 2 clove of garlic
  • 1 Tablespoon dried thyme
  • ½ teaspoon salt
  • Quarter lime
  • 1 diced onion
  • 1 Chicken bouillon

Creole Sauce

  • 3Tablespoon Paprika
  • 4 Cloves of garlic (diced, minced, however you like it)
  • 1 red bell pepper (diced)
  • 2Tablespoon Olive oil
  • 1 Tablespoon Coriander and Thyme
  • Sprigs of bay leaves
  • 1.5 diced onion
  • 2 Tablespoon Ketchup
  • 1 Teaspoon soy sauce
  • 1 Tablespoon  chilli powder
  • 1 chicken bouillon
  • 1.5 Tablespoon of Sweetener – Treacle,  honey, brown sugar or molasses ( I used pancake syrup- cheater I know!!!)

Instruction.

  1. Place chicken wings in a saucepan or bowl and add all the marinade ingredients- marinate for an hour or overnight. (if you’re in a rush, you can cut time by bringing chicken to boil with all the marinade ingredients).
  2. Place chicken on baking tray and grill in the oven until brown ( healthier option than frying)
  3. Add olive oil to large sauce pan and allow to sizzle.
  4. Add onion, diced bell pepper , herbs, chilli powder, bouillon and paprika to oil. Stir for approx 2mins until onion is translucent.
  5. Add ketchup, soy sauce and sweetener; stir and add chicken to sauce pan. Reduce heat and bring to boil for approx 10mins.
  6. Adjust for salt, bouillon and pepper.

P.s. Lime enhances flavour so if you want to remove bouillon from your cooking, lime / lemon brings all the flavour to the yard!
